BUSY DAY CHICKEN AND RICE 
1 c. uncooked rice
1 chicken, cut up
1/4 lb. butter
1 pkg. onion soup mix
2 c. boiling water
Salt and pepper to taste

Preheat oven to 350 degrees. Grease bottom of 9 x 13 inch baking pan. Cover bottom of pan evenly with rice. Arrange chicken pieces on rice. Dot with butter. Sprinkle dry onion soup mix over all chicken. Salt and pepper to taste. Pour boiling water into pan. Bake for about 1 hour.

NOTE: If browner chicken is desired, brown chicken before placing on rice.
