1 c. butter
2 c. brown sugar
2 eggs
1/4 c. hot water
1 tsp. baking soda
1 c. ground coconut
1 tsp. vanilla
4 1/2 c. flour
1 1/2 tsp. baking powder

Cream shortening, sugar together. Add well beaten eggs and add soda to hot water and blend into cream mixture. Blend in coconut and vanilla. Sift together flour and baking powder. Add to cream mixture and mix well. Chill for several hours or overnight, then form into small round balls and flatten with fork to give washboard effect.

Bake at 400 degrees for 8 minutes.
