CHOCOLATE MOUSSE 
1 pkg. (6 oz.) semi-sweet chocolate pieces
1/4 c. light cream
1/2 tsp. rum extract
2 tbsp. sugar
Pinch of salt
4 eggs, separated

Melt chocolate with cream over low heat, stir constantly. Remove from heat, stir rapidly until completely smooth. Add salt and rum extract. Beat egg yolks slightly, add to chocolate mixture, beat 2 to 3 minutes until thick and creamy. Beat egg whites until foamy. Gradually add sugar and beat until egg whites form stiff glossy peaks. Gently fold chocolate mixture into egg whites. Chill until set, about 3 hours. Garnish with whipped cream.
