CHICKEN ENCHILADA CASSEROLE 
Chicken thighs or breasts
1 1/2 tsp. salt
1/2 tsp. pepper
Garlic powder
Onion Powder
1 pt. sour cream
8 oz. green salsa
1 can cream of chicken soup
Corn tortillas
12 oz. Cheddar cheese, grated

Boil chicken, salt, pepper, garlic powder, and onion powder. Mix together the sour cream, salsa, and soup. Cut up tortillas into triangles. Tear cooked chicken into strips. Layer tortillas, chicken, sour cream mix, and cheese. Repeat until dish is full. Bake at 325 degrees for 30 to 40 minutes.
