CHICKEN IN FOIL 
1 whole chicken breast (skinned and boned)
1 tsp. butter, melted
Freshly ground pepper
1 tbsp. bread crumbs
2 tsp. grated Parmesan cheese
3/4 slice American cheese, finely chopped
Vegetable cooking spray

Separate chicken breast into halves, brush both sides of each breast with melted butter. Sprinkle with pepper. Combine bread crumbs and 2 cheeses on wax paper. Dip chicken in the mixture, patting it on. Spray 2 squares of foil with vegetable spray. Place chicken in each, close foil packages tightly in double foil. Place on baking sheet, bake at 450 degrees for 30 minutes. Makes 2 servings.

(If you use low calorie butter and American cheese, it is only 183 calories a serving. You can use boneless chicken and for more servings, just double or as much as you want. You can use any mild cheese. This is good cold as well as hot. Great for a bag lunch.)
