CHILI SAUCE | |
3 qts. tomatoes, skinned, chopped 1 c. celery, chopped 2 c. onions, chopped 1 c. green pepper, chopped 1/4 c. canning salt 1 3/4 c. sugar 1/4 c. brown sugar 1/2 tsp. pepper 1 1/2 tbsp. pickling spices (tied in bag) 1 c. white vinegar Combine tomatoes, celery, onion, green pepper and salt. Let set overnight. Drain next day in a colander 2 hours, "Don't Press", just let drain good. Add tomato mixture with sugars, pepper, spices, and vinegar. Bring this all to a boil. Reduce the heat, cook 15 minutes. Place in prepared jars and seal. Delicious on meats. Can use in baked beans, chili soup or in making salad dressing. |
