REFRIGERATOR COOKIES 
1/2 c. butter
1 egg
2 tsp. vanilla
1 tsp. baking powder
Dash of salt
1 c. flour
1 c. chopped unsugared dates
1 c. shredded coconut
1 c. chopped walnuts or pecans

Cream butter, egg and vanilla until mixed and fluffy. Beat in dry ingredients gradually mixing well after each addition. Mix in dates, coconut and 1/2 cup nuts. Form dough into two 1 1/2 inch logs. Roll logs in remaining nuts. Wrap in waxed paper and chill (or freeze) until firm enough to slice. Slice cookies 1/4-3/8 inch thick and bake 10-12 minutes until light golden brown. Cool. Makes 64 cookies. Each serving equals 2 cookies which equals 83 calories.
