SOFT PRETZELS | |
1 pkg. yeast 1 1/4 c. warm water 2 tsp. salt 5 c. all purpose flour Lg. crystal salt (Kosher salt) 2 tbsp. oil 6 c. boiling water 6 tbsp. baking soda Dissolve yeast in 1/4 cup of water and add to pinch of sugar. Allow to ferment for 10 minutes. In another large bowl, add the flour, salt and add the yeast mixutre and the remaining water. Mix for 10 minutes on a floured board. This will be very stiff dough. Turn into a bowl which has been coated with 2 tablespoons of oil; cover and allow to rise until double, about 1 1/2 hours. Punch down and pinch off dough pieces and roll into a coil about 20 inches in length. Make a pretzel shape and place into boiling water and baking soda mixture. When pretzels float, remove and place onto a cake rack to dry some. Sprinkle with kosher salt and bake in a 475 degree oven until golden brown, about 12 minutes (coat the pan with pam and cornmeal to prevent sticking). Remove and eat as soon as cool enough. |
