MEXICAN MEAT LOAF ROLL 
1 1/2 lbs. ground beef
1/4 c. old fashioned or quick oats, uncooked
2 eggs, beaten
1 tbsp. Worcestershire sauce
1 tsp. pepper
1 (8 oz.) pkg. cream cheese, softened
1 (4 oz.) can chopped green chilies, drained
3/4 c. salsa
4 oz. grated cheddar or Monterey Jack cheese
1 med. onion, chopped

Combine meat, oats, eggs, onions, Worcestershire sauce and pepper; mix well. On wax paper, press meat mixture into 20"x10" rectangle. Combine cream cheese and chilies; mix well. Spread cream cheese mixture over meat mixture to within 1" of outer edge. Roll, jelly roll fashion, starting at narrow end. Place in a 12"x8" baking dish. Bake at 350 degrees for 40 minutes. Top with cheese and salsa, continuing baking 10 more minutes. Let stand 10 minutes before serving. Yield: 6 to 8 servings.
