ROLLED MEAT LOAF WITH WALNUTS
AND ORANGES
 
1 egg
1/3 c. milk
2 lb. ground chuck
2 tbsp. finely chopped onion
1 1/2 tsp. Worcestershire sauce
1 1/2 tsp. salt
1/8 tsp. pepper
Stuffing (recipe follows)
1/2 c. catsup
1/4 c. water
Toasted walnut halves
Orange slices

STUFFING:

3 c. soft bread crumbs
1 1/2 c. chopped celery
1 c. chopped walnuts
1/2 c. milk
2 tbsp. finely chopped onion
1 tsp. salt
1/4 tsp. poultry seasoning
1/8 tsp. pepper

Combine egg and milk in a large mixing bowl, beating well. Add meat, onion, Worcestershire sauce, salt and pepper; mix well. Shape into a 12 x 10 inch rectangle on a sheet of waxed paper.

Spoon stuffing over beef, leaving a 1/2 inch margin around edges. Beginning at short end, roll up meat jelly roll fashion lifting waxed paper to help in rolling. press seams and ends together to seal.

Place roll, seam side down, in a 13 x 9 x 2 inch baking pan. Combine catsup and water; pour over all. Bake at 350 degrees for 1 hour and 15 minutes. Remove to a serving platter. Garnish with toasted walnut halves and orange slices. Yield 8 servings stuffing. Combine all ingredients in a large mixing bowl; stir well. Yield 3 cups.
