BACON WRAPPED TROUT 
3/4 c. melted butter
1 pkg. dry onion soup mix
1/4 tsp. pepper
3 lb. trout
1/2 lb. bacon

Combine butter, soup mix, pepper. Spread trout with mixture and wrap bacon sliced about them. Secure with toothpicks. Broil (highest heat in oven) 10 minutes per side or until meat flakes easily.

We had to use mahi-mahi instead of trout (the local market didn't have trout so I picked a simlar range of fish - medium texture and flavor), and the result was great. It only took about 15 minutes total, and everyone kept going back until there was nothing left but the toothpicks. You could use tilapia, which has the same texture and moderate flavor - the bacon and rub will carry the day.
