APRICOT BARBECUED CHICKEN 
1 (3 1/2 lb.) fryer, cut up (skin if desired)
1 (8 oz.) jar apricot preserves
1 (8 oz.) bottle Russian dressing w/honey
1 env. Lipton's onion soup mix

Preheat oven to 325 degrees. Wash chicken pieces and pat dry. Place in large casserole. Mix 1/2 of the apricot preserves with 1/2 bottle Russian dressing and onion soup mix. Pour over chicken and bake for 1 hour. Save other half of preserves and dressing for another time.
