CORN BREAD SALAD 
3 c. corn bread, crumbled
1/2 c. celery, diced
1/2 c. green pepper, diced
1/2 c. green onions, diced
2 firm, ripe tomatoes, chopped
1 c. rice, cooked
6 slices crispy fried bacon, crumbled
1 c. cheese, grated
1 c. mayonnaise
Salt to taste
Pepper to taste

Combine the first 8 ingredients and toss lightly to mix. Add mayonnaise and mix well. Chill 2 hours or overnight before serving. Serves 8 - 10.
