BANANA OATMEAL MUFFINS | |
1 1/2 c. whole wheat flour 1 1/2 c. quick oats 1 c. all-purpose flour 1 c. sugar 1/3 c. wheat germ 2 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 3 eggs, lightly beaten 1 (8 oz.) can crushed pineapple (undrained) 2 c. mashed bananas 1/2 c. vegetable oil Combine first 8 ingredients in a large bowl. Make a well in center. Add eggs, pineapple, bananas, and oil, stirring until moistened. Spoon into greased muffin tins to 2/3 full. Bake in 350 degree oven 20-22 minutes. Yield: 2 1/2 dozen. |
