CHOCOLATE MOOSE | |
8 oz. bittersweet chocolate (chips or bar) 1/4 c. butter 2 eggs, separated Pinch salt 1 tsp. cream of tartar 3/4 c. heavy cream 3 tbsp. powdered sugar 1. In saucepan, slowly melt chocolate and butter over low heat, stirring occasionally to prevent scalding. Beat egg yolks into slightly cooled chocolate. 2. In small bowl, whip egg whites, salt and cream of tartar into firm peaks. Fold into chocolate. 3. Whip cream and powdered sugar until light and fluffy. Gently fold into chocolate. 4. Chill "moose" until ready to serve. Cover with plastic wrap pressed directly onto "moose" so air does not touch it, as film will form. HINTS: Start step 2 an 3 while chocolate is melting and cooling. the faster all 3 steps are put together, the lighter and fluffier it will turn out. |
