FRIED PIZZA 
4 c. flour
1 egg
1 pkg. dry yeast (2 1/2 tsp.)
1 tsp. salt
1 1/4 c. warm water
Pizza sauce (any)
Mozzarella cheese
Fresh basil or topping of choice

Makes 12-15 little pizzas. Measure 4 cups of all-purpose flour into mixing bowl with salt. Make a well in the center and add 1 egg and dry yeast. Add warm water to well and stir with fork. Continue stirring (now with a wooden spoon) until dough forms a ball. You may need to add up to 1/4 cup more of warm water. Cover bowl with damp cloth and let rise for 30 minutes to 1 hour in warm place.

When ready, heat frying pan (medium heat) with small amount of olive oil. Pinch off (tennis ball size) dough and flatten into 5 inch round. Place in frying pan. Dough will puff up. Cook about 1 minute. then turn over. Spoon pizza sauce on top and cheese or whatever topping you wish.

Cover pan and cook until cheese is melted - being careful not to burn (about 1-2 minutes). Serve with knife and fork. You may cook all the dough and freeze shells for future use.
