OATMEAL PEANUT BUTTER BARS | |
3/4 c. butter 2 c. uncooked quick-cooking oatmeal 1 1/4 c. flour 1 c. brown sugar 1 tsp. salt 1/4 tsp. water 1/2 tsp. baking soda 1/3 c. dark corn syrup 1 tsp. vanilla 1 egg 1/2 c. peanut butter 1 (6 oz.) pkg. chocolate chips Melt butter in a saucepan and stir in the oatmeal, flour, brown sugar, salt, water, soda, dark corn syrup, vanilla and egg. Blend well and spread in a lightly greased 9 x 13 inch pan. Bake at 375 degrees for 20 to 25 minutes or until bars are a light golden brown. Remove from oven and spread the peanut butter over the hot bars. Sprinkle with the chocolate chips. Cover with foil for a few minutes so heat melts the chocolate. Spread the melted chocolate to frost. Makes about 3 dozen bars, depending upon the size of bars. |
