POTATO PANCAKES 
6 lg. potatoes
4 lg. onions
1/4 c. water
2 lg. eggs
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. parsley flakes
3 tbsp. flour

Peel potatoes and cube. Add to blender (may be grated if preferred). After potatoes are chopped to a fairly coarse consistency, add all the other ingredients. Blend until smooth. Add flour to thicken and cook as regular pancakes are cooked. Makes 18 pancakes. Serves 6-8.
