2 c. flour
2 tsp. vanilla
2 tsp. baking soda
1 can crushed pineapple, not drained
2 c. sugar
2 eggs
1/2 c. chopped pecans

Mix all together. Bake on a cookie sheet with sides at 350 degrees for 20 minutes.

ICING:

8 oz. cream cheese
1 box powdered sugar
1 c. coconut
1 stick butter
1 tsp. vanilla
1/2 c. nuts

When above cake is slightly cooled, frost with this icing. Great to take to potlucks or large family gathering. Serves 24 people.
