TWICE BAKED POTATOES 
4 med. baking potatoes
2 tbsp. butter
Milk
2 oz. mushrooms, chopped
American cheese
Paprika

Scrub potatoes; prick with fork. Bake at 425 for 45 to 60 minutes. Do not wrap in foil! Cut a lengthwise slice from top of each baked potato; discard skin from slice. Reserving potato shells, scoop out insides and add to potato portions from top slices; mash. Add butter. Beat in enough milk to make stiff consistency. Season to taste with salt and pepper. Stir in mushrooms. Pile mashed potato mixture into potato shells. Bake at 425 degrees for 20 to 25 minutes in 10 x 6 baking dish. Place cheese on top of potatoes. Sprinkle with paprika. Bake until cheese melts, 2 or 3 minutes longer. Makes 4 servings.
