ZUCCHINI SPICE CAKE 
Dry Mixture:

2 1/2 c. whole wheat flour
1 tsp. salt
1 1/2 tsp. cinnamon
2 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. clove
1 tsp. nutmeg
2 c. chopped walnuts

Stir together.

Wet Mixture:

Put following in bowl and beat 3 minutes:

2 tsp. vanilla
2 c. grated zucchini
3 eggs, beaten
1/4 c. milk
3/4 c. butter

Preparation:

Add wet mixture to dry mixture. Stir well together.

Bake at 350°F. for 2 - 9 inch cake pans 35 minutes or 1 - 9 x 12 cake pan 45 minutes.

FROSTING:

2 (8 oz.) cream cheese
2/3 c. honey

Soften cream cheese and add honey until desired consistency.

This is really good with icing but...I realized that it has no sugar added to the recipe. I guess if you ice it that is supposed to make up for no sugar added. My friend could also taste the baking soda and baking powder. You might want to lessen those amounts. It real heavy in weight and is a little dry. Put enough icing on it and YUM! Oh, and it needs raisins...
