ZUCCHINI SPICE CAKE | |
Dry Mixture: 2 1/2 c. whole wheat flour 1 tsp. salt 1 1/2 tsp. cinnamon 2 1/2 tsp. baking powder 1 1/2 tsp. baking soda 1/2 tsp. clove 1 tsp. nutmeg 2 c. chopped walnuts Stir together. Wet Mixture: Put following in bowl and beat 3 minutes: 2 tsp. vanilla 2 c. grated zucchini 3 eggs, beaten 1/4 c. milk 3/4 c. butter Preparation: Add wet mixture to dry mixture. Stir well together. Bake at 350°F. for 2 - 9 inch cake pans 35 minutes or 1 - 9 x 12 cake pan 45 minutes. FROSTING: 2 (8 oz.) cream cheese 2/3 c. honey Soften cream cheese and add honey until desired consistency. |
