EASY BEEF STROGANOFF 
1 lb. boneless round steak, cut 3/4 inch thick, cut into very thin strips
2 tbsp. butter or oil
1/2 c. chopped onion
1 c. chopped mushrooms (optional)
1 can cream of mushroom soup, undiluted
1/2 tsp. paprika
1/2 c. sour cream
Hot cooked noodles
Fresh parsley garnish

Slice beef. In skillet over high heat, 1 tablespoon butter or oil, cook 1/2 the beef, and 1/2 the onion until beef is no longer pink. Remove and set aside, and cook the remaining beef and onions, return all of meat mixture to skillet, stir in soup and paprika. Heat thoroughly, stir occasionally. Reduce heat to very low. Stir in sour cream, gently heat thoroughly. Serve over noodles, garnish with parsley. 6 servings. May double recipe.
