LIGHT AND FLUFFY CHEESE CAKE 
1 c. graham cracker crumbs
3 tbsp. sugar
1/4 c. melted butter
1 (8 oz.) pkg. cream cheese
1/2 c. sugar
1/8 tsp. salt
1/2 c. milk
1 tsp. lemon juice
1 tsp. vanilla
1 1/2 c. thawed Cool Whip

Combine crumbs and 3 tablespoons sugar. Add butter; mix well. Press firmly in 8 inch square pan. Bake at 375 degrees for 8 minutes; cool. Beat cheese until smooth and fluffy. Add sugar gradually, beating constantly. Add salt. Blend in milk, lemon juice, and vanilla. Then blend in Cool Whip. Cover the crumbs with this mixture. Chill until set, at least 3 hours.

Suggested Topping: Reserve about 1/4 cup of the crumbs and sprinkle over top, cherry pie filling or any other filling you desire. Or just leave plain. Delicious any way you choose.
