ORANGE-RAISIN RICE 
2/3 c. sliced celery
3 tbsp. butter
1 1/2 c. water
2 tbsp. grated orange rind
1 c. orange juice
1 tsp. salt
2 tbsp. honey
1 c. long grain rice
1/2 c. raisins

Saute celery in butter in saucepan. Stir in water, orange rind, orange juice, salt, and honey; bring to a boil. Add rice and raisins. Cover and cook over low heat for 25 minutes until rice is tender.
