KEY LIME PIE 
1/3 c. sugar
1 envelope unflavored gelatin
1/4 c. fresh lime juice
3 egg yolks (slightly beaten)
2 tsp. grated lime peel
2 c. heavy cream
1/8 tsp. green food coloring
1 (9 inch) graham cracker pie shell

In top of double boiler, mix sugar and gelatin. Combine lime juice and egg yolks; blend into sugar mixture. Cook over simmering water until thick, stirring constantly. Remove from heat, stir in lime peel and cool. Whip cream with food coloring until stiff and fold into gelatin lime mixture. Pour into crust. Chill until firm.
