CREOLE JAMBALAYA 
1 to 2 lbs. precooked meat
2 1/2 c. water
1 lg. onion
2 c. rice

Cut into serving size portion. When using uncooked shrimp or crawfish, reduce water to 2 cups. Drain well. Combine water and lightly seasoned stock and rice. Cover and when mixture comes to a boil, reduce heat. Stir and simmer 20 to 25 minutes or until all juice is gone. 6 servings, 2/3 cups each.
