BROWN RICE | |
1 c. Basmati rice (white or brown) 1 lg. onion (cut in 1/2 inch pieces) 3 tbsp. butter, butter or olive oil 1 tsp. salt Fry onion slowly until dark brown. Add washed rice and fry for a few minutes mixing well. Add salt and water to cover 1/2 inch (approximately 2 cups). Bring to rolling boil. Cover, lower heat to lowest and cook until you hear it begin to fry on bottom and grains "stand at attention". Serve immediately. Variation: After onions are fried to translucent, add 1 cup finely chopped mushrooms and proceed as above. |
