CHEDDAR HOME FRIES 
2 tbsp. sunflower seed oil
1 lg. onion, chopped
6 med. potatoes, peeled and cubed
2 c. med. Cheddar, grated
Seasoned salt to taste

In a large skillet or electric frying pan, heat oil to medium temperature (350 degrees). Add onion and potatoes and steam/fry covered, turning occasionally with a spatula. When almost tender, sprinkle with seasoned salt to taste. Remove lid. Add Cheddar and turn potatoes several times until lightly browned.
