KRAUT AND SAUSAGE 
1 lb. fresh sausage links
8 oz. sauerkraut
2 med. potatoes, peeled and quartered
1 sm. apple, peeled and sliced
1 sm. onion, sliced
1 tbsp. wine vinegar
2 c. water
1 tbsp. barley
Salt and pepper to taste

Place the sausage links and enough water barely to cover them in a sauce pan. Bring to a boil and cook over medium heat for 20 minutes. Remove links from water and set aside. Meanwhile, rinse the sauerkraut with cold water and let drain. Place kraut, sausage, potatoes, apple, onion and water in a heavy pot and bring to a rolling boil. Sprinkle in the barley, lower heat and simmer for about 1 hour or until potatoes are tender. Serves 2.
