ZUCCHINI RELISH 
10 c. grated zucchini
4 c. chopped onions
1 lg. green pepper
1 lg. red pepper

Soak above ingredients in 5 tablespoons of salt overnight. Drain and rinse in water.

Combine:

1 tsp. nutmeg
1 tsp. turmeric
1 tsp. whole celery
1 tsp. dry mustard
1 tbsp. cornstarch
5 c. sugar
2 1/2 c. white vinegar

Add spices, cornstarch, sugar and vinegar to zucchini mixture. Boil for 15 minutes. Seal in hot sterilized jars.
