“PANCAKES” IS IN:
NEXT RECIPE:  PEACH CRISP

PANCAKES 
2 cups sifted all-purpose flour
2 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 3/4 cup milk or buttermilk
2 eggs, slightly beaten
2 tbsp. oil or melted shortening

Sift flour with sugar, baking powder and salt. In mixing bowl combine milk, eggs and oil. Add dry ingredients. Blend thoroughly, but only until lumps disappear.

Preheat skillet, uncovered, at 350°F.

Pour scant 1/4 cup batter into skillet for each pancake and fry until bubbles break and edges are cooked. Turn and fry on other side. Serve immediately.
