ZUCCHINI PANCAKES 
2 c. zucchini, shredded
1/2 c. all-purpose flour
1/2 tsp. salt
2 eggs, well beaten
dash of Worcestershire sauce
1/4 c. onion, chopped fine
1 tsp. baking powder
dash of pepper
dash of oregano

Combine all ingredients. Form patties and brown on both sides in lightly oiled hot skillet. Serve in place of potatoes or rice.
