BROCCOLI SAUTE' A LA NICOISE | |
1 1/2-2 lbs. broccoli 3 strips bacon 1/2 c. bread crumbs 3 tbsp. oil 1/2 c. onion, chopped 1 clove garlic, minced Salt and pepper Trim broccoli but leave some stem. Place in a wire basket and plunge into boiling salted water. Cook until just tender, drain and set aside. Dice bacon and saute' until crisp. Drain and set aside. In same skillet saute' bread crumbs in bacon drippings until browned. Remove and set aside. Put 3 tablespoons oil in the skillet and add onion and garlic, saute until translucent. Add broccoli to the skillet with onion and garlic, gently tossing until heated through. Add bread crumbs and bacon, adjust seasonings, mix light and serve immediately. |
