MANICOTTI 
12 manicotti noodles
1 1/2 lb. cottage or ricotta cheese
12 oz. American or Mozzarella cheese, shredded
1/2 c. Parmesan cheese
2 eggs, beaten
4 oz. chopped mushrooms
1/8 c. chopped parsley flakes
1/2 tsp. salt
1/4 tsp. pepper
1 qt. spaghetti sauce
1/2 lb. hamburger
1 c. water

Mix cheeses, eggs, parsley, salt and pepper. Gradually add 6 manicotti to boiling, salted water so that water continues to boil. Cook uncovered and stir occasionally for 2 minutes. Drain, do not rinse. Repeat for remaining 6 manicotti. Meanwhile, fry and crumble hamburger. Drain and add spaghetti sauce and mushrooms. Add water and heat. Pour enough of the sauce to cover the bottom of 13 x 9 x 2 inch and an 8 x 8 x 2 inch baking dish. (The size of the dish doesn't matter.)

Eight manicotti fit into the large dish and the remaining 4 fit into the smaller one. Fill individual manicotti with cheese mixture and arrange in baking dish in a single layer. Any remaining cheese mixture should be added and melted into the spaghetti sauce. Pour remaining sauce over manicotti, covering completely. Bake at 400 degrees for 25 minutes. Microwave for 10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
