MANICOTTI 
2 lbs. ground beef
2 (10 oz.) pkgs. frozen, chopped spinach
1 lg. onion, chopped
2 cloves garlic
1 lg. jar spaghetti sauce
3 eggs, beaten
1 c. grated Parmesan or Romano cheese
1 lb. Mozzarella cheese, shredded
24 saltine crackers
20 manicotti noodles

Brown garlic and onion in a little oil. Add beef and brown. Drain excess grease. Cook and drain spinach. Add beaten eggs, grated cheese and 1/3 lb. Mozzarella to spinach.

Roll crackers between waxed paper into fine crumbs. Add to spinach. Salt and pepper to taste. Add spinach mixture to meat. Mix well.

Cook noodles gently 4-6 minutes. Drain. Stuff noodles. Lay in 13x9x2 inch pan (greased with a little butter). Cover noodles with sauce and 2/3 lb. Mozzarella. Bake at 350 degrees for 30 minutes or until cheese melts.
