CHEESE BISCUITS 
2 c. self rising flour
1/4 c. plus 2 tbsp. shortening
1 c. (4 oz.) shredded sharp cheddar cheese
3/4 c. buttermilk
1 tsp. dry mustard
1/2 tsp. baking soda

Combine flour and shortening in medium bowl; cut in shortening with pastry blender until mixture resembles coarse meal. Stir in cheese.

Combine buttermilk, mustard, and soda; pour into flour mixture and stir well. Turn dough out onto floured surface and knead lightly 3 to 4 times.

Roll out dough to 1 inch thickness, cut into rounds with 2 inch cutter. Place biscuits on lightly greased baking sheet. Bake at 450 degrees for 10 to 15 minutes. 1 dozen.
