ORIENTAL ROTINI SALAD 
1/2 c. peanut oil
2 tbsp. lemon juice
1 tbsp. soy sauce
1 clove garlic, minced
Dash of ground ginger
1/2 pkg. rotini (pasta)
1/4 lb. snow peas, blanched
1/2 sm. red onion, chopped
1/3 c. cashew nuts

Cook rotini as directed. Drain well. Blend first 5 ingredients. Toss rotini with dressing and remaining ingredients. Chill completely before serving. Makes enough for 2 entrees or 4 side dishes. Approximate preparation time: 25 minutes (plus chilling).
