ONE - DISH SAUSAGE POTATO DINNER 
1 lb. smoked sausage, chopped in 1-inch pieces or smaller
1 med. onion, cut into slices
2 bell peppers, cut in slices
1 c. water
4 potatoes, cut in slices 1/4-inch thick (peeled or unpeeled) (red unpeeled are good)
Salt (to taste)
Pepper (to taste)

In large skillet, brown sausage; drain off excess drippings. Add other ingredients and cover. Cook over medium heat for approximately 15 minutes, until potatoes are tender.
