SCRAMBLED EGG CASSEROLE 
1/2 c. chopped green pepper
2 tsp. butter
6 beaten eggs
1 tsp. butter
1 tsp. flour
1 c. milk
1/2 c. cheese
1 tsp. butter
3/4 c. bread crumbs

Saute pepper in 2 teaspoons butter until tender. Add eggs and scramble until starting to "set". In medium saucepan, melt 1 teaspoon of butter. Blend in flour, salt, and pepper. Add milk and cheese. Stir until melted. Add cheese mixture to eggs and dump into a greased casserole dish. Combine last 1 teaspoon of butter and bread crumbs and sprinkle over the top of entire mixture. Bake at 350 degrees for 15 to 20 minutes.
