SCRAMBLED EGG CASSEROLE 
1/2 lb. browned & crumbled sausage
1/4 c. chopped green pepper
3 tbsp. butter
6 beaten eggs
1 tbsp. flour
1/4 tsp. salt
1 c. milk
1/2 c. grated cheese
2 tbsp. chopped pimento
3/4 c. soft bread crumbs

Saute green pepper or chives in 2 tablespoons butter until tender. Add eggs and scramble just until set; set aside. In medium pan, melt 1 tablespoon butter. Blend in flour, salt, then add milk. Cook until bubbly. Stir well. Add cheese and stir until melted. Fold in egg, pimento and sausage.

Pour into 1 quart casserole and sprinkle buttered bread crumbs on top. Bake for 30 minutes at 350 degrees. Double recipe makes 9 x 13 inch casserole dish.
