SCRAMBLED EGG CASSEROLE 
1/4 c. butter
12 beaten eggs
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. white pepper
2 c. milk
1 c. Cheddar cheese, shredded
1 1/2 c. soft bread crumbs
2 tbsp. butter

Melt butter in frying pan until it foams. Add beaten eggs. Stir until eggs are just set. Remove from heat. In ovenproof casserole, melt 2 tablespoons butter, add flour and cook 2-3 minutes. Add milk, salt and pepper and cook until thickened and bubbly. Stir in cheese and scrambled eggs. Toss bread crumbs with melted butter and sprinkle on top. Bake at 350 degrees until bubbly - about 20 minutes. Serves 12.
