HAM JAMBALAYA 
3 slices bacon (chopped)
3 green onions (tops and bulbs chopped)
1/2 green pepper (chopped, without seeds)
1 1/2 c. uncooked rice
2 c. beef broth or canned beef bouillon
2 1/2 c. tomatoes (1 lb, 4 oz. can)
1/4 tsp. paprika
1/4 tsp. thyme
pinch of salt
3/4 lb. diced cooked ham
1 tbsp. chopped fresh herbs (parsley, chives or basil)

Saute bacon, onions and pepper together until light brown. Place uncooked rice in bottom of casserole dish, add broth, tomatoes, paprika, and thyme, salt and meat. Cover and cook at 375 degrees until rice is done, about 45 minutes. Sprinkle chopped fresh herbs (parsley is always obtainable, but others are good, too) over top and serve. Serves 4.
