BAKED TROUT 
6-8 trout
1/4 c. chopped onion
1/4 c. chopped parsley
3 tbsp. butter
2 tbsp. flour
Salt and pepper to taste
1/2 c. cracker crumbs
1/4 c. shredded Cheddar cheese

Preheat oven 375 degrees.

Season trout with salt and pepper. Place on bed of parsley and onions in shallow pan - foil line so easy clean up.

Blend butter with flour; spread on trout. Combine crumbs with cheese and sprinkle on trout. Bake 15 minutes or until golden and easily flakes with fork.

Very good! I modified it slightly by using red onion and adding a little lemon juice.
