LAKE TROUT BAKE 
2-3 lb. dressed trout
6 slices bacon
1 thinly sliced onion
1 crumbled bay leaf
3 tbsp. soft butter
2 tbsp. all-purpose flour
1/2 cup fine cracker crumbs

Preheat oven to 375°F. Season trout with salt, pepper, garlic powder, lemon juice and onion powder.

Spread 3 bacon slices along center of shallow pan. Cover with onion. Sprinkle with bay leaf; place trout on top. Blend butter with flour; spread on fish; sprinkle with crumbs; place 3 more bacon slices on fish.

Bake, uncovered 35 to 45 minutes or until easily flaked with fork, but still moist.

Note: Additional butter may be added 15 minutes before baking is completed.

Serves 3 or 4.

Outstanding!! I actually skipped the bacon and onion because I got home a little late from the lake and didnt want to spend the time thawing bacon and cutting onions.

I sprinkled a very light amount of lemon pepper and onion powder on the fish and rubbed it into the meat a little and then I mixed about 3/4 teaspoon lemon pepper in with the butter flour mix.

Turned out fantastic and everyone loved it. I have always just smoked lakers and once I had one on the ice today i thought, you know what Im going to try baking this for supper, and Im sure glad I did! I made 1 fillet off a 29 incher and there is nothing left! Guess what's for supper tomorrow night! Simple, quick, and absolutely awesome taste!!
