TAMALE BITES 
2 c. crumbled cornbread
1 can (10 oz.) mild enchilada sauce
1/2 tsp. salt
1 1/2 lbs. ground beef
1 can (8 oz.) tomato sauce
1/2 c. shredded Monterey Jack cheese

Combine cornbread crumbs, 1/4 cup enchilada sauce and salt. Add ground beef; mix well, then shape into 1 inch balls. Place in a shallow baking dish or pan. Bake uncovered in a 350 degree oven, 18-20 minutes.
