SASSY BLACK BEAN SOUP | |
1 tbsp. olive oil 1 c. chopped onion 2 sm. cloves garlic, minced 2 (15 oz.) cans black beans, drained 14 1/2 oz. can stewed tomatoes, undrained & chopped 10 1/2 oz. can chicken broth 1/2 c. commercial picante sauce (I use Pace hot) 1/4 c. water 1 tsp. ground cumin 2 tbsp. fresh lime juice Chopped fresh cilantro (optional) Heat oil in large nonstick saucepan over medium heat until hot. Add onion and garlic; saute until tender. Add beans and next 5 ingredients, stirring well. Bring to boil; reduce heat and simmer uncovered 15 minutes. Remove from heat and stir in lime juice. Garnish with cilantro when served if desired. |
