SMOKED SAUSAGE WITH BLACK BEANS 
1/2 lb. sausage, cut in 1/4 inch slices
1 c. diced onion
1 c. diced green pepper
1 c. diced red pepper
1 can stewed tomatoes, drained and chopped
1 tsp. salt
1/4 tsp. oregano
1 lb. can black beans (drained)
1 clove garlic

Cook sausage until brown and remove from pan. Wipe pan. Saute peppers, onion and garlic in 1 tablespoon olive oil until tender, but not brown. Add tomatoes, sausage and beans. Heat through. Serve on bed of white rice.
