CRISPY FRIED CATFISH 
6 sm. whole catfish, skinned and cleaned or catfish fillets
1 c. cornmeal, yellow or white
1 tsp. salt
1/4 tsp. pepper
Vegetable oil

Wash fish thoroughly under cold running water. Combine cornmeal, salt, and pepper. Roll each piece of fish in cornmeal mixture to coat thoroughly. Heat oil (2-3 inches) in deep fryer or Dutch oven to 375 degrees or heat oil 1 1/2 to 2 inches in heavy skillet until hot. Fry fish in deep fryer or skillet until golden brown on both sides, 5-8 minutes. Serves 4-5.
