MIXED VEGETABLES 
1 1/2 c. snow peas, stems and strings removed
1 1/4 c. Chinese cabbage, roughly chopped
6 dried Chinese mushrooms, soaked in hot water for 30 minutes, discard stems, and cut into quarters
1 med. carrot, cut into thin slices
1 sm. red or green pepper, seeded and cut into strips
1 c. basic Chinese vegetable stock
1 3/4 c. bean sprouts
2 shallots, finely diced
1 tsp. corn flour
1 tbsp. toasted sesame seeds
Freshly ground pepper

Stir fry mangetout (snow peas), cabbage, mushrooms, carrots, and pepper strips in a non-stick frying pan with half the vegetable stock for 2 minutes. Add bean sprouts and shallots. Toss for 30 seconds. Mix remaining stock with corn flour. Add to frying pan and simmer for 2 minutes. Sprinkle with sesame seeds. Season with pepper and serve.
