ITALIAN CHICKEN | |
1 (30 oz.) jar Ragu spaghetti sauce or 4 c. your favorite sauce 6 chicken breasts, skinless & boneless 6 (2"x1"x1/4") slices mozzarella or Swiss or string cheese 2 tbsp. butter 1/2 c. grated Parmesan cheese Pour half the sauce into a 7 x 11 inch glass baking dish. Set aside. Pound chicken pieces to about 1/4 inch in thickness with a meat tenderizer. Spread 1 teaspoon butter and lay 1 piece of cheese on the end of each chicken breast. Roll up the chicken with cheese inside. Then arrange chicken roll seam side down in sauce. Spoon remaining sauce over chicken. Microwave on high for 15 minutes. Turn dish, then continue cooking for 10 minutes more. Until chicken is fork tender. Instead of microwaving this can be baked in a 350 degree oven for 45 minutes. Top with grated Parmesan cheese. Serve with noodles. The kids really like this one. |
